Baked chicken skewers is a very appealing dinner to make due to both its practicality and delicious taste. When making this meal, you won’t need a separate dish for vegetables as you can prepare the chicken skewers together with the vegetables to be baked all at once in the oven, saving you time.
Cooked vegetables are richer than fresh ones in terms of carotenes. For example, tomatoes contain quite a lot of antioxidant substances that clear harmful radicals. Lycopene is just one of these antioxidant substances and cooked tomatoes contain more lycopene than fresh tomatoes.

2 pieces of chicken breast
1 tablespoon of yogurt
4 tablespoons of olive oil
1 teaspoon of salt, chili flakes, black pepper and curry powder
1 tablespoon of tomato paste
5 green peppers (it’s better to use these in summer)
Wash the chicken well, chop it up into chunks and put it to the side. Slice the tomatoes and peppers and mix them together with all the other ingredients in a separate bowl. Then, add the chopped chicken in and mix again. Cover the container with stretch film so that the chicken doesn’t dry out and let it marinate in the fridge for at least 1 hour.
Assemble the skewers by placing one piece of chicken followed by a piece of tomato and pepper. Place the chicken skewers on the baking tray with baking paper. Place the tray on the top rack of the oven on the grill setting preheated to 250 degrees. Cook for about 20 minutes until the chicken browns. In order to prevent the chicken skewers from drying out, take care to cook them in a controlled manner and without opening the oven door.
Service recommendation: You can serve your chicken skewers with rice, salad and ayran (turkish yogurt drink).
